Designing interventions to support the safe development of rapidly growing livestock value chains in sub-Saharan Africa requires a clear understanding of consumer demands. This study aimed to determine purchase patterns, consumers' preferences, and willingness to pay for safe pork attributes; specifically, the presence of a veterinary inspection stamp and the cleanliness of the butchery. A discrete choice experiment-based survey was used to investigate the purchasing behavior of 401 pork consumers: 253 buying raw pork for household consumption, and 148 buying cooked pork for out-of-home consumption. The study findings indicate that the average quantity of pork purchased by consumers was approximately 0.4 Kg per transaction, with the majority of consumers making several purchases per week. The average price per Kg of pork was KES 310 (Approx. 2.60 USD) at the time of the study. Data from the choice experiment showed that consumers were willing to pay a price premium of KES 245 (Approx. 2.1 USD) and KES 164 (Approx. 1.4 USD) per Kg for evidence of better veterinary meat inspection and higher butchery hygiene respectively; further, these were the two most important attributes they considered while making a pork purchase decision. These findings highlight the potential to leverage consumers' willingness to pay to improve the food safety within pork value chains in this context. Investing to increase consumer awareness on food safety issues should be considered to generate an effective market demand, especially in rural areas with relatively lower literacy levels.

This study used the Q-methodology approach to analyze perceptions of precision livestock farming (PLF) technology held by stakeholders directly or indirectly involved in the US swine industry. To see if stakeholders' perceptions of PLF changed over time as PLF is a rapidly evolving field, we deliberately followed up with stakeholders we had interviewed 6 months earlier. We identified three distinct points of view: PLF improves farm management, animal welfare, and laborer work conditions; PLF does not solve swine industry problems; PLF has limitations and could lead to data ownership conflict. Stakeholders with in-depth knowledge of PLF technology demonstrated elevated levels of optimism about it, whereas those with a basic understanding were skeptical of PLF claims. Despite holding different PLF views, all stakeholders agreed on the significance of training to enhance PLF usefulness and its eventual adoption. In conclusion, we believe this study's results hold promise for helping US swine industry stakeholders make better-informed decisions about PLF technology implementation.

The purpose of the paper is to provide an ex-ante evaluation of banning price promotions for discretionary foods (e. g., such as confectionary, crisps, biscuits, sweet and savory snacks, cakes) in Scotland. The methodology consisted of the estimation of demand systems by socioeconomic groups (i.e., lifestage and income groups) for 19 food groups using a highly product disaggregated dataset. These results were used to simulate scenarios consisting of eliminating price promotions on the discretionary food products for the entire sample and by group and analyzing nutritional results. The results indicated a net impact of reducing energy by 651 kcal per capita per week (C.I. -695, -608). Similar results were found for macro nutrients. There were some significant differences across different income and lifestage groups, with kcal energy reductions being significantly greater amongst household with lower income, and in households where respondents were aged 45 years or over. The analysis concluded that restrictions on the promotion of foods considered to be high in saturated fat, sugar, or salt (HFSS) are seen as one measure to improve the overall nutritional quality of foods consumed. Results indicate that restricting promotions has the potential to reduce the number of calories, sugar, saturated fats and sodium for most food groups.

Known in the literature as underutilized, neglected or orphan crops, these crops have been cited as having the potential to improve food and nutritional security. The literature also highlights however that consumers in developing countries are increasingly abandoning their traditional diets that these crops are part of, and are replacing them by western diets. In this context, the purpose of this paper is to investigate the consumption and nutritional implications of expanding the participation of underutilized crops in current diets. This was done using a modified version of the microeconomic consumer problem. This was augmented with a linear constraint using generalized rationing theory that can be found in the economics literature. The method was applied to the case study of the consumption of millet (finger millet, botanical name: Eleusine coracana) by rural, urban-poor and urban-affluent Ugandan socioeconomic groups. The results indicated that millet could contribute to improving the intake of macronutrients and of some micronutrients, though the overall picture is complex. However, under current preferences and given its demand inelasticity, to achieve a substantial increase in the quantity of millet in the diet will require a significant reduction of its price. Otherwise, the net impact on nutrition as measured by the mean adequacy ratio will be only slightly positive for rural and urban-poor households. Our findings indicate that supply-side initiatives aimed at increasing the productivity of underutilized crops (reducing crop price) are likely to produce disappointing results in restoring their importance unless accompanied by specific interventions to expand demand. Animal welfare scientists have accumulated knowledge and developed interventions to improve livestock welfare, but these are poorly adopted in commercial practice. Animal welfare interventions are rarely tested for economic viability and this limits their uptake. This study employs Stochastic Partial Budgeting (SPB) to determine the viability of animal welfare improvements. Aggression between pigs is used as an example because there is a large literature base from which to draw interventions, and the problem has persisted for decades without resolution. Costs and benefits of three interventions to control aggression (pre-weaning socialisation, synthetic maternal pheromones and large social groups) were estimated by reviewing the academic and industry literature and by conducting a survey of sixteen pig farmers. The net effects were compared to farmers' willingness to pay (WTP) for interventions to reduce aggression as identified by recent research. Results are consistent with prior research which indicates that improving animal welfare generally comes at a cost to producers. Nevertheless, pre-weaning socialisation resulted in a neutral or positive net effect 38% of the time and should be central to campaigns promoting the control of aggression in the industry. Exposing pigs to synthetic maternal pheromones did not improve profitability but the net costs were small and within the realms of WTP for a sub-group of farmers with animal welfare goals. The net costs of converting existing buildings in order to house pigs in large social groups were beyond the realms of farmers' WTP. The approach adopted in this study, of combining SPB with WTP from the sector, should be extended to other animal welfare issues.

This study investigates the substitution and complementary effects for beef mince attributes drawing on data from large choice experiments conducted in the UK and Spain. In both countries, consumers were found to be willing to pay a price premium for the individual use of the labels "Low Fat" (UK: €3.41, Spain: €1.94), "Moderate Fat" (UK: €2.23, Spain: €1.57), "Local" (UK: €1.54, Spain: €1.61), "National" (UK: €1.33, Spain: €1.37), "Organic" (UK: €1.02, Spain: €1.09) and "Low Greenhouse Gas Emissions (GHG)" (UK: €2.05, Spain: €0.96). The results showed that consumers in both countries do not treat desirable food attributes as unrelated. In particular, consumers in Spain are willing to pay a price premium for the use of the labels "Local", "Organic" and "Low GHG" on beef mince that is also labelled as having low or moderate fat content. By contrast, consumers in the UK were found to discount the coexistence of the labels "Low Fat" and "Organic", "Low Fat" and "Low GHG" and "Moderate Fat" and "Low GHG". The results, however, suggest that in the UK the demand for beef mince with moderate (low) fat content can be increased if it is also labelled as "Organic" or "Low GHG" ("Local").

The analysis of changes in prices is not only important because they directly affect households' affordability and, therefore, their food security but also because they may trigger changes in the composition of their food and drink choices. Thus, an increase in prices may force a household with limited resources to choose a bundle of goods with lower prices that substitute their original choices and are probably of lower quality. This paper considers the situation of each UK country and the implications that trading down in quality within a food and drink category has on nutrition. Two motivations to pursue these analyses are to explore the sort of substitutions that households do within a category due to an increase in prices and, in the UK leaving the European Union (Brexit) context, the impact that an increase in food prices may have on nutrition. After computing estimates for trading down for each country for the period 2007-2014, we regress the annual rate of change by nutrient with respect to the annual trading in quality for six food qualities that are major contributors of fat, sugar and salt to the diet. The results indicate that trading down in quality occurs in most of the studied categories and countries, and when households trade down, they move to products with worse nutritional quality. This points out the need to keep improving the quality of products through reformulation, ensure that consumers are well informed of nutritional quality of products and monitor the effect of changes in prices.

When deciding whether to invest in an improvement to animal welfare, farmers must trade-off the relative costs and benefits. Despite the existence of effective solutions to many animal welfare issues, farmers' willingness to pay for them is largely unknown. This study modelled pig farmers' decisions to improve animal welfare using a discrete choice experiment focused on alleviating aggression between growing/finishing pigs at regrouping. Eighty-two UK and Irish pig farm owners and managers were asked to choose between hypothetical aggression control strategies described in terms of four attributes; installation cost, on-going cost, impact on skin lesions from aggression and impact on growth rate. If they did not like any of the strategies they could opt to keep their current farm practice. Systematic variations in product attributes allowed farmers' preferences and willingness to pay to be estimated and latent class modelling accounted for heterogeneity in responses. The overall willingness to pay to reduce lesions was low at £0.06 per pig place (installation cost) and £0.01 per pig produced (running cost) for each 1% reduction in lesions. Results revealed three independent classes of farmers. Farmers in Class 1 were unlikely to regroup unfamiliar growing/finishing pigs, and thus were unwilling to adopt measures to reduce aggression at regrouping. Farmers in Classes 2 and 3 were willing to adopt measures providing certain pre-conditions were met. Farmers in Class 2 were motivated mainly by business goals, whilst farmers in Class 3 were motivated by both business and animal welfare goals, and were willing to pay the most to reduce aggression; £0.11 per pig place and £0.03 per pig produced for each 1% reduction in lesions. Farmers should not be considered a homogeneous group regarding the adoption of animal welfare innovations. Instead, campaigns should be targeted at subgroups according to their independent preferences and willingness to pay.

Several animal welfare issues persist in practice despite extensive research which has been linked to the unwillingness of stakeholders to make changes. For example, most farmers do not perceive pig aggression to be a problem that requires action despite the fact that stress and injuries are common, and that several solutions exist. Frequent exposure to animal suffering could affect farmer responses to distressed animals. This study investigated for the first time whether this occurs, using pig aggression as a focus. Using video clips, 90 pig farmers judged the severity of aggression, level of pig exhaustion and the strength of their own emotional response. Their judgments were compared to objective measures of severity (pigs' skin lesions and blood lactate), and against control groups with similar pig experience (10 pig veterinarians) and without experience (26 agricultural students; 24 animal science students). Famers did not show desensitization to aggression. However, all groups underestimated the outcome of aggression when they did not see the fight occurring as compared to witnessing a fight in progress. We suggest that farmers be provided with evidence of the economic and welfare impact of aggression as indicated by lesions and that they be advised to score lesions on affected animals.

Aggression between pigs remains an important animal welfare issue despite several solutions existing. Uptake of livestock welfare research relies on various stakeholders being willing to recommend or adopt changes to farm structure or management (e.g., veterinarians, researchers, farmers). This survey provides insight into the attitudes and practices of 122 UK and Irish pig farmers regarding aggression between growing pigs. Our aim was to understand why mitigation strategies are not adequately implemented. The majority of farmers mixed pigs at least once during production and had tried at least one mitigation strategy in the past. Farmers expressed limited willingness to implement strategies in the future, and a structural equation model revealed that this was directly influenced by their beliefs about the outcome of controlling aggression, and their perception of their ability to implement the necessary changes. Willingness was indirectly influenced by their perceptions of aggression as a problem and views of relevant stakeholder groups. Veterinarians had the greatest impact on farmer behavior. We recommend that researchers test research findings in practice, calculate cost-benefits of implementation, and transfer knowledge through various sources. This study showed that structural equation modeling is a valuable tool to understand farmer behavior regarding specific and entrenched animal welfare issues.

PURPOSE: To evaluate risk factors associated with posterior subcapsular cataract (PSC) development and the relationship between vitamin D deficiency and etiology of PSC. METHODS: Of 195 consecutive patients from a private ophthalmology practice, diagnosed with PSC, serum vitamin D3 (25-OH D) levels were obtained for 175, and associations among risk factors, comorbidities, and PSC were assessed. RESULTS: In all 175 PSC patients, mean 25-OH D levels were low (24 ng/mL ±11 SD) compared with age/sex-matched standards. Significant differences in 25-OH D levels were noted between PSC subjects taking/not taking calcium supplements, systemic steroids, osteoporosis medications, etc. Alone, smoking status and calcium channel blockers and/or topical steroids use made no significant difference in PSC subjects 25-OH D levels, but two or more of these factors were associated with lowered levels of 25-OH D (P<0.001). Low vitamin D was correlated with female sex, autoimmune disease, and non-skin cancer diagnosis, but not with age, or other comorbidities or medication use. In five early-stage PSC patients taking 5,000 IU of 25-OH D daily for vitamin D deficiency, there was resolution of their cataracts during the 2-year follow-up period. CONCLUSION: Vitamin D levels for most PSC patients fell below the 30 ng/mL calcium homeostasis threshold. Some comorbidities and non-ophthalmic interventions are associated with the development of PSC at less depressed levels of 25-OH D. In this series, vitamin D deficiency was associated with PSC cataract, suggesting that raising the level of vitamin D intake may reduce PSC incidence.
